Gluten-Free, Dairy-Free Lemon Cookies

These gluten-free, dairy-free lemon cookies are not only fun to make, but taste absolutely delicious! We chose to make heart-shaped cookies, but you can choose any shape that you’d like.

Gluten-Free, Dairy-Free Lemon Cookies

Ingredients
  

  • 1 1/4 cup gluten-free baking flour
  • 1/4 cup powdered sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons lemon zest
  • 1/2 cup Miyokos dairy-free butter, softened
  • 1/8 cup maple syrup
  • 1/2 teaspoon vanilla
  • 2 teaspoons freshly squeezed lemon juice

Glaze

  • 1 cup powdered sugar
  • 3-4 teaspoons freshly squeezed lemon juice
  • 1 teaspoon water
  • lemon zest for topping

Instructions
 

  • Preheat the oven to 350 degrees F.
  • In a large bowl, mix together the gluten-free baking flour, powdered sugar, baking powder, salt, and lemon zest. 
  • In another bowl, use a mixer to cream the butter. Slowly mix in the maple syrup, vanilla, and lemon juice.
  • Add the wet ingredients to the dry ingredients and mix well to form a cookie dough.
  • Roll out your cookie dough and cut out desired shapes.
  • Place each cookie on a baking sheet lined with parchment paper and bake for 10-12 minutes.
  • While the cookies are baking, make the glaze by mixing together all the ingredients.
  • When the cookies are done, let them cool before glazing and sprinkling with the lemon zest. Enjoy!
