Smoked Paprika Sweet Potatoes

We love these diced sweet potatoes as a healthier alternative to french fries! Whether it is burger night, or tri tip taco night, these sweet potatoes are the perfect, crispy side dish with any meal.

Sweet potatoes have many nutritional benefits, too, offering healthy dose of vitamin A, vitamin C, and manganese with each serving.

Smoked Paprika Sweet Potatoes

Ingredients
  

  • 2 large sweet potatoes, peeled and diced
  • 1 tablespoon avocado oil
  • 1 tablespoon smoked paprika
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 425 degrees F.
  • Line a large baking sheet with parchment paper.
  • Use a vegetable chopper to dice the peeled sweet potatoes.
  • Toss the diced sweet potatoes in a large bowl with the avocado oil, until well coated.
  • Add in the seasonings and mix well.
  • Bake for 15-20 minutes, or until your sweet potatoes are roasted to your liking.
