Crockpot Whole Chicken
As a busy mama, this recipe is very near and dear to my heart. Not only is it the base for making my homemade bone broth, but with this recipe I can easily craft two different dinners for my family. That is a huge win in my book for saving time and providing variety!
Before jumping into the recipe, I want to mention that when you are seasoning the chicken, be sure to use your fingers or a small spatula to pull the skin up from the breast to create a pocket. By doing this, you will be able to add some of the seasoning beneath the skin of the chicken for extra flavor.
Crockpot Whole Chicken
Ingredients
- 1 whole organic chicken
- 2 yellow onions, quartered
- 1.5 teaspoons paprika
- 1 teaspoon smoked paprika
- 1 teaspoon thyme
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
Instructions
- Quarter the two onions, pull the pieces apart, and lay them at the bottom of the crockpot to create a base for the chicken rest on.
- Remove any organs and rinse off the whole chicken. Pat it dry with a paper towel.
- Combine all the seasonings above to make a dry rub. Season the inside cavity of the chicken as well as the entire outside. *Make sure to see my tip above about seasoning the breasts.
- Place the chicken breast side down on top of the onions in the crockpot. There is no liquid needed because the chicken will cook down in its own juices.
- Put the lid on the crockpot and cook the chicken on low for 7-8 hours.
- Once the chicken is done, remove it from crockpot and pull all the meat off the bones to enjoy as is, or use the meat in another recipe.
