Gluten-Free Peanut Butter Cup Cookies
Gluten-free cookies are my absolute favorite dessert! These Gluten-Free Peanut Butter Cup Cookies definitely make the list of my top five all-time favorite cookies.
When you are making these cookies, the peanut butter that you use matters. So if you can, find an organic peanut butter that has only one ingredient…..organic peanuts! When you use other peanut butters that are filled with extra oils and flavors, it definitely alters the flavor, and it’s just not as healthy.
For the peanut butter cups, I love the “Unreal Peanut Butter Cups.” They have cleaner ingredients and they are the perfect size for cutting into fourths to top each cookie.

Gluten-Free Peanut Butter Cup Cookies
Ingredients
- 1/2 cup salted butter, softened
- 1/2 cup white sugar
- 1 cup brown sugar
- 1/2 cup organic creamy peanut butter
- 2 eggs
- 2 tablespoons water
- 1 teaspoon vanilla extract
- 2 1/2 cups gluten-free baking flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 375 degrees F.
- In a large bowl, cream together the butter, sugars, and peanut butter with an electric mixer.
- Add in the eggs, water, and vanilla. Mix well.
- In a separate bowl, mix together the flour, baking soda and salt.
- Add the dry ingredients to the wet ingredients and stir until a dough is formed.
- Place parchment paper on a baking sheet and roll two-inch cookie balls. Place them about three inches apart on the baking sheet.
- Bake for 12-15 minutes or until the edges are golden brown.
- While the cookies are baking, cut the Unreal Peanut Butter Cups into fourths.
- Take the cookies out of the oven and gently press a quartered peanut butter cup into the center.
- The peanut butter cup will begin to melt and that is okay.
- Serve the cookies with a glass of almond milk or your drink of choice. Enjoy!
